Oatmeal Applesauce Muffins

Another cold day, another muffin (found under recipes at Momaha.com). The kids love muffins and cocoa at snack time!

Ingredients:
1 1/2 c. old fashioned oats
1 1/4 c. flour
1 tsp baking powder
3/4 tsp. baking soda
1 c. unsweetened applesauce
1/2 tsp. cinnamon
1/2 tsp vanilla
1/2 c. milk
1/2 c. light brown sugar
3 TBSP vegetable oil
1 egg
OPTIONAL (and I did not use): 1/2 c. canned pumpkin or 1/2 cup blueberries.

Combine oats, flour, baking powder and baking soda in a large bowl. Then add applesauce, cinnamon, vanilla, milk, brown sugar, oil, pumpkin or blueberries and egg. Mix until dry ingredients are moistened.

Fill muffin cups 2/3s full. Top with 1/2tsp cinnamon and a dash of nutmeg.

Bake at 400 degrees for 20 minutes for full size muffins or 12 minutes for mini muffins.

The result: Addison at 3 at snack! Mmmm!
