Chocolate Chip Muffins


Recipe of the Week: Chocolate Chip Muffins From the Williams Sonoma "Muffins" Book & found on Momaha.
Ingredients:
1/2 cup unsalted butter, melted (I used regular margarine and it worked fine)
3/4 c. buttermilk
2 large eggs
1 tablespoon vanilla
2 cups flour
3/4 c. sugar
2 teaspoons baking powder
1/2 tsp. baking soda
1/2 tsp salt
2 cups semi sweet chocolate chips

1. Preheat oven to 350 degrees. Line muffin cups or spray with cooking spray
2. Mix first 4 ingredients until smooth.
3. In another bowl, stir together, flour, sugar, b. powder, baking soda and salt.  Make a well in the center and add the buttermilk mixture. Beat until smooth. Fold in the chocolate chips. Do not overmix.
4. Fill muffin cups.
5 Bake until golden, 20-25 minutes

I made these into mini muffins and heart shaped muffins. The kids loved them at breakfast this morning! Would highly recommend...yummy!
