Pinterest Tested: Baked Fried Chicken

Tonight was chicken night. Hummm, how should I prepare the? I sorted through my unsorted Tummy Love on Pinterest to find Baked not fried Kentucky Fried Chicken. Huh, let's try that!

Place thawed chicken breast tenderloin strips in a bowl of milk. Let soak for 20-30 min.
"Mix in a Gallon Size Ziploc or Large Bowl:  
1/2 tsp. Salt
1 T Season All
3/4 tsp Pepper
1 c. Flour
2 tsp. Paprika
Preheat oven to 400 degrees. Cut 1/2 stick of butter into a few pieces and place in a 9x13 pan. Melt butter in pre-heated oven.
Spread melted butter around the bottom of the pan. Lightly spray the pan, if needed, to make sure that there are no dry spots.
Shake excess milk off of chicken and completely coat each piece with the seasoning mix. You can either shake the chicken in the bag, until coated, or dip each piece in the bowl until coated.
Place each piece of chicken in the pan.
Cook for 20 min. Turn each piece of chicken and continue cooking for 20 more minutes, or until cooked through"

Ratings: Chris gave this 4 out of 5 stars. Not bad. He would have it again. So, it is worthy of a pin on Pinterest!

It went great with steamed veges and the homemade French bread we made earlier today. Mmmm!

Pinterest Tested: Rocky Road Cookies


Another tried and true Pinterest Recipe (and oh so yummy!). I did my first monthly shopping today (yes, trying to go to the store only once a month but pop in 2 get milk and fruit only if needed at mid month. Another blog post to come I believe), and I did not buy any chocolate for myself. Walmart stopped stocking my favorite little snack mix with almonds, berries and dark chocolate, so I was left empty handed and quite mad at Walmart (I am a stockholder damn it!).

Moving on...

I had to make something chocolate to get by until I got my monthly M&Ms at Costco (which I also did today and will do only monthly now). This was the Pin I tried from Pinterest.

Rocky Road Cookies:
  • 3 cups powdered sugar
  • 2/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 3 extra large egg whites
  • 1 tbsp vanilla extract
  • 2 cups semisweet chocolate chips
  • 2.5 oz sliced almonds, toasted (I skipped this as my kids would not like almonds in their cookies).
  • 1 cup mini marshmallows
Directions:
  1. Preheat the oven to 350 degrees F, and line two sheet pans with parchment paper.* I did not have any, so I lightly sprayed the cookie sheets with Pam and it worked okay.
  2. In a large bowl, sift together the powdered sugar and cocoa powder. Whisk in the salt. Add the egg whites and vanilla and whisk until combined. Stir in the chocolate chips and almonds.
  3. Use a cookie scoop to portion out small mounds on to the parchment paper, then top each cookie with 4-5 marshmallows. Pop into the freezer for 5 minutes to chill slightly (this prevents them from spreading too much in the oven). * I did not do this and the cookies did not spread. So, who knows?
  4. Bake for 12-13 minutes until the marshmallows are golden brown. Let the cookies sit on the paper for a few minutes to set, before moving them to a wire rack to cool. Are these ooey gooey or what? They are wonderful! 4 out of 5 of us liked them. Asher does not count entirely as he is fighting off a cold.

Fresh off of Pinterst!!

I am going to try posting my latest efforts at trying some of the items I pin on Pinterest. I mean, what is the point if I never do any of them?

The first one for this week is for Amish White Bread. If you have ever been to Great Harvest Bread in Omaha, this bread is pretty close to that! Chris and I give this recipe 5 out of 5 stars. It is wonderful! Now, my oven is not the best, so I had to lower the over shelf to practically the bottom so that the bread would not burn, but the bread itself tastes amazing!


AMISH WHITE BREAD, from Allrecipes.com

Ingredients:
2 cups warm water (110 degrees F/45
degrees C)
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour
Directions:
1. In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
2. Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
3. Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
4. Bake at 350 degrees F (175 degrees C) for 30 minutes.

 Next, I am trying to find Crock pot recipes that my family will eat. Mr. Picky, aka Chris, does not like much in the way of things made in a crock pot. However, when I came across a recipe for Beer Crockpot Chicken, I thought I may have a winner. It was so easy and good! Chris gave this 4 out of 5 stars. But, I may have had it in the crockpot too long as I thawed the chicken a little before cooking it. Now, for the recipe: Beer Crockpot Chicken: Chicken legs, whole chicken, thighs,whatever little chicken parts you want along with a can of beer and a mix of your favorite spices: garlic, basil, paprika, pepper, salt.
"*You can use whatever spices you like
  • Put all ingredients into crockpot
  • If frozen cook on high 4-5 hours or low 8-10
  • If fresh cook on high 3-4 hrs or low 7-8 hours if fresh"

Chocolate Chocolate Brownies

Chocolate Chocolate Brownies

1 cup butter, melted
3 cups sugar
1 tsp vanilla extract
4 eggs
1 1/2 cups flour
1 cup unsweetened cocoa powder
1/2 tsp salt
1 cup+ semi-sweet chocolate chips (Put some of the chocolate chips on top, which I did not do).

Preheat oven to 350˚ F. Grease 9x13 baking dish (I use glass). In a large bowl, combine melted butter and sugar. Add in vanilla extract and eggs. Mix until completely combined. In a smaller bowl, mix together flour, cocoa powder, and salt. Add to the butter mixture. Mix well. Stir in 1 cup chocolate chips. Pour into prepared pan and flatten into an even layer. Sprinkle with more chocolate chips and give them a light tap to make sure they stick to the batter. Bake for 35-40 minutes or until the edges are crispy and the center doesn't jiggle (I find that the toothpick trick doesn't really work here because the center will still be slightly gooey until fully cooled). Cool for about 6-8 hours before cutting because if you don't, you will have a huge gooey mess. I like to bake these before I go to bed so they can coll overnight. Not that I eat one for breakfast or anything like that...
